Food Residues as Raw Materials to Explore in the Context of a Circular Economy

Short Introductive summary

In this presentation I will present some of the work going on in my group on the development of sustainable downstream processes to valorize food residues. I will focus on the use of alternative solvents, mainly eutectic mixtures, as task-specific solvents to create more efficient and sustainable downstream process strategies. The valorization of seafood and fish wastes/by -products will be assessed. In addition to the analysis of the processes developed, some of the applications we are attempting for the products/compounds recovered will be presented as a way of showing the rationale behind the process developed which is always defined in accordance with the biorefinery we are developing and the demands of the applications envisioned for the products recovered.
